Every pizza starts with our signature dough, handcrafted from a blend of organic flour and organic whole wheat flour, mixed with filtered water, a touch of local raw honey, first cold-pressed organic extra virgin olive oil, and a pinch of sea salt. Naturally leavened with non-GMO yeast, it’s cold-fermented to develop deep flavor and a perfect crust—crispy on the outside, airy on the inside.
Our sauce is pure and simple—just the way it should be. We use only organic tomatoes packed in their own organic juice, seasoned with organic whole leaf basil, sea salt, and a hint of citric acid to balance the sweetness. No sugar. No shortcuts.
Each pie is finished with whole milk mozzarella, a rich, creamy cheese made with cultured pasteurized milk and a kiss of buffalo milk for a smooth melt and full-bodied flavor that sets our pizza apart.
For a fresh, vibrant twist, select pizzas are topped with our organic garlic scape basil pesto—a bright blend of fresh basil, first cold-pressed olive oil, Parmesan cheese (made from pasteurized part-skim milk, cheese cultures, salt, and enzymes), and a splash of lemon juice. It adds a burst of herbaceous flavor that perfectly complements the richness of the cheese and the tang of the sauce.
