Our white pie starts with our slow-fermented dough, made from Central Milling organic flour and organic whole wheat flour, filtered water, first cold-pressed organic extra virgin olive oil, and sea salt. The dough is then naturally leavened with non-GMO yeast and a touch of local raw honey to feed the yeast. It’s cold-fermented for over 24 hours to develop a crust that’s crisp on the outside, soft in the middle, and full of character.
Instead of tomato sauce, this pie features a rich layer of whole milk mozzarella, made from cultured pasteurized milk, buffalo skim milk, salt, and enzymes. It melts beautifully and delivers a buttery, savory base for the toppings.
At the heart of this pie are our slow-cooked mushrooms—gently simmered to bring out their deep, earthy flavor and meaty texture. This extra step ensures every bite is packed with umami and perfectly balanced alongside the creamy cheese.
